I've never made one myself (mom or dad usually makes them) but I can tell you that it's extremely tasty! If you don't like bacon, you can just replace it with anything else you want. -------------------------------------------------- Ingredients 1 refrigerated pie crust 8 bacon strips (or whatever if you don't want bacon) 1 4-ounce can-diced green chilies (drained) 4 green onions (chopped) 1 cup shredded Monterey Jack cheese (or any available cheese will work) 1 cup shredded sharp cheddar cheese 1 1/4 cups half and half (some supermarkets may not have them but ask anyway- I'm sure they'll suggest something else that's available at the store.) 4 eggs 1/2 teaspoon salt Preheat oven to 425F. Unfold the crust. Using wet fingertips, press together any tears. Press crust into 9-inch deep dish pie plate. Press foil over crust to hold shape. Bake for 5 minutes. Remove from oven,then remove foil. Reduce temperature to 400F. Cook bacon in a heavy large skillet over medium-high heat until brown and crisp (*don't let it burn*). Transfer it to paper towels and drain. Crumble and sprinkle bacon, then apply the chilies and green onion over crust. Combine Monterey Jack cheese and cheddar cheese and sprinkle over. Beat half and half, eggs and salt in a medium bowl then blend. Pour half and half mixture into crust then let it bake. Bake it until your knife when inserted into center of the pie comes clean (usually takes about 45mns.) When you're done, let it out for 5mns (you don't want to burn your tongue), then, slice it into equal pieces and serve.
